- 5.0 out of 5 stars from Rook -- The Best Green Chile Cookbook to Date : This book is a must have if you like Green Chiles and cooking. While I'm a little skeptical of cook-books dealing with chiles as most seem to focus on spicy chiles or just other peppers in general, this book actually deals with the Green Chiles you find usually in New Mexico. Having lived in New Mexico and certain other areas were hatch chiles are a staple summer indulgence done either solely or added to nearly every food for breakfast, lunch, dinner, and any other cooking area that could come up, this book deals with them all and in a good way that you don't need to be an experienced chef to make the recipes work. A good book to start with as the recipes are pretty simple and don't require the cook to be overly experienced or requiring special cookware to make. Have made nearly a dozen of the recipes in the book with good results. I'm surprised that this book has gotten a few bad reviews, as I've nearly lost this cookbook a couple of times to family and/or friends who've liked the dishes made and want to try their hand at the various recipes. - 3.0 out of 5 stars from Wishful Dreams - Tim Townsend -- Good, Simple Recipes : As you can guess, this book contains recipes that use Hatch chiles, however, you can probably substitute Anaheim chiles and the recipes will still work. There are several different varieties of chiles grown in Hatch, N.M., like Big Jim, Barker, NuMex 6-4, Sandia, R-Naky, and others. They vary in heat and taste. This book's recipes doesn't distinguish between the actual varietals (Hatch chile is not a varietal). If you are fortunate enough to have a local supplier, then you will probably understand and apply the differences as you desire, providing of course, the supplier identifies the actual varietal. Im growing my own Hatch and Big Jim Chiles this year and am planning on roasting this fall. I loved Gloria's Taste and Flavors of San Antonio and this cookbook has got alot of recipes. I'm fixing Sour Cream Enchiladas tonight. The Sour Cream sauce is simple and delicious. As I'm preparing tonights dinner I flipped the page and saw Beef and cream cheese Enchiladas which looked phenominal. These recipes look fantastic and cover a wide spectrum of tastes and interests. If you love Tex Mex and Hatch Chiles and appreciate simple great tasting food this is the cookbook your looking for. I've got over 3000 cookbooks and when I get stumped as to what to fix I grab Glorias cookbooks. For Fathers Day I requested barbecue chicken and pimento Scalloped potatoes. I was making scallop potato sandwiches today. I fixed this potato recipe from her other cookbook on Easter and the largest pyrex was instantly wiped out and my guests were scrapping the bowl.
